RECIPE: Marinated Cucumbers We visited Hatteras in July because an old college buddy
of mine was there with her family. Since she lives in Oregon, I don't
get to see her too often. While we were there, her family invited us over
for dinner. Karen, my friend, and her husband, Steve, were the cooks.
They made these wonderful, refreshing marinated cucumbers that we absolutely
loved. In fact, I liked them so much, I've taken them to about three different
potlucks since July! 3 large cucumbers Slice the cucumbers and onions thin, add the salt and cover with water for at least 2 hours. Drain, but don't rinse. Add the sugar and vinegar and refrigerate until ready to serve.
